1. Butterfly and flatten your chicken breasts. 2. Add bread crumbs to a large plate. 3. Beat 3 eggs per chicken breast and put on a large plate. 4. Add chicken into egg wash and cover completely. Do the same for bread crumbs. Repeat the egg wash and breading process 3-4 times for a thick coating. 5. Add Extra Virgin Olive Oil (EVOO) to a pan or large pot (a large pot helps contain oil splatters!) on low to medium heat. 6. Once the oil is warmed up, add the breaded chicken breasts. 7. After 5-6 minutes, flip and fry the other side for another 5-6 minutes. Ensure the chicken turns golden brown, not blackened. 8. Top the fried chicken with your preferred sauce, then cover generously with mozzarella cheese (whole sliced is preferred, but shredded works). 9. Put the chicken into the broiler for 5 minutes or until the cheese chars slightly and is bubbly and golden.
