1. Cook orzo and allow to cool. 2. Chop up cucumber, onion, and kale. Add to a large bowl and mix. 3. Once orzo has cooled, add it to the bowl and toss. 4. Drizzle with olive oil and lemon juice, give it a good mix. 5. Add hummus and tzatziki one spoonful at a time, mixing until coated. 6. Cook your protein of choice. 7. Serve the salad by pairing with your protein, I went with a Medi marinaded steak!
