1. Over medium-high heat, in a large pot or pan, add a drizzle of olive oil. 2. Dice 3 boneless chicken breasts and add to the pot or pan. 3. Add some salt, pepper, garlic powder, and Italian seasoning to the chicken. 4. Cook the chicken for about 5-7 minutes until cooked through. 5. Remove chicken from the pot or pan and set aside. 6. Add 1 minced yellow onion and 3 minced garlic cloves to the pot and cook for 3 minutes or until soft. 7. Pour in a 24oz jar of your favorite marinara sauce. Fill the empty jar with water and add it to the pot. Bring to a boil and then let simmer. 8. Add the pasta first, then the diced chicken back into the pot. Cover and cook for 10-12 minutes, or until pasta is cooked al dente. 9. Add 1/2 cup of Parmesan and 1/4 cup mozzarella, and mix well. 10. While still on the stove, top with the remaining 3/4 cup mozzarella and cook for about 3-4 minutes or until the cheese is melted. 11. Remove from heat and enjoy!
