Ingredients: - 1 jar of colossal Castelvetrano style pitted olives @mezzetta - 1 Boursin Garlic and Fine Herb @boursincheese - a small bowl of Italian breadcrumbs - 1/4 cup flour - 1 egg, beaten - Olive oil spray - Skewers (option for dipping olives) Instructions: 1. Drain olive brine into a container and save for future use (optional!), move the olives onto paper towels to pat dry 2. Using patience and a spoon, gently stuff each olive with Boursin 3. Move the olives into a freeze safe container and freeze the stuffed olives for about 15 minutes. 4. Set up 3 small bowls for flour, beaten eggs and Italian breadcrumbs 5. It’s easiest to use a skewers to roll and dip each stuffed olive into flour, then dip it in egg, and coat it in Italian breadcrumbs. Set onto a tinfoil lined pan 6.
